Recipe 1: Vanilla Chia Pudding without Sweetener

Ingredients

  • 3 tbsp organic chia seeds
  • 200 ml unsweetened almond or coconut drink
  • 1/2 tsp vanilla extract
  • 1 pinch erythritol or stevia (optional)

Preparation

  1. Place all ingredients in a jar with a lid, shake vigorously.
  2. Let rest for 5 minutes, then shake again.
  3. Let swell in the refrigerator for at least 4 hours or overnight.
  4. Garnish with a few berries or a dollop of almond butter.

Recipe 2: Egg Chia Muffins (3 pieces)

Ingredients

  • 3 eggs
  • 1 tbsp organic chia seeds

Preparation

Ingredients

  • 3 tbsp organic chia seeds

  • Sweetening: Erythritol, stevia, or monk fruit are typical keto sweeteners. Honey and maple syrup are not keto-friendly.
  • More fat: Adding 1 tsp of MCT oil or almond butter ensures longer satiety.
  • Berries: small amounts fit into a low-carb profile (especially raspberries with approx. 5 g net carbs/100 g).

How many carbohydrates do chia seeds really have?
Per 100 g, chia seeds contain approx. 42 g carbohydrates – but about 34–38 g of that is fiber. The net carbohydrates (relevant for low-carb/keto) are therefore only approx. 4–7 g.
