Crispy Sesame Flatbread from the Pan

Sesame is one of the oldest spice plants in the world – and one of the most versatile in the kitchen. This simple sesame flatbread recipe, cooked in a pan, beautifully highlights the nutty aroma of our NaturaCereal sesame seeds. Perfect as a side dish, snack, or for dipping.

Ingredients

  • 250 g wheat flour (type 550)
  • 1 tsp baking powder
  • ½ tsp salt
  • 150 ml lukewarm water
  • 2 tbsp olive oil
  • 3 tbsp NaturaCereal sesame seeds – natural or roasted, to taste
  • 1 tsp Fleur de Sel for sprinkling (optional)

Instructions

  1. Prepare the dough: Mix flour, baking powder, and salt in a bowl. Add olive oil and lukewarm water, then knead everything into a smooth dough – about 5 minutes by hand.
  2. Let it rest: Cover the dough and let it rest for 20 minutes at room temperature.
  3. Incorporate sesame: Divide the dough into 4 portions. Roll each portion thinly (approx. 3–4 mm), sprinkle with sesame seeds, and gently press them into the dough.
  4. Roast (optional): For a more intense aroma, roast the sesame seeds beforehand in a dry pan over medium heat for 2–3 minutes until golden brown, then let them cool.
  5. Cook: Heat a non-stick pan over medium heat without oil. Cook each flatbread for 3–4 minutes per side until golden brown spots appear.
  6. Done: Serve warm – sprinkle with Fleur de Sel if desired.

  • Whole wheat version: Replace half of the flour with whole wheat flour for an earthier flavor.
  • Sesame + herbs: Press rosemary or za'atar directly into the dough along with the sesame – perfect for dipping.
  • Use as a wrap: Top the warm flatbread fresh from the pan with hummus, fried onions, and fresh vegetables.
  • Sweet variation: Sprinkle sesame with a little honey and a pinch of cinnamon on the bread – ideal for breakfast or afternoon coffee.
