Crispy Sesame Flatbread from the Pan

Ingredients
- 250 g wheat flour (type 550)
- 1 tsp baking powder
- ½ tsp salt
- 150 ml lukewarm water
- 2 tbsp olive oil
- 3 tbsp NaturaCereal sesame seeds – natural or roasted, to taste
- 1 tsp Fleur de Sel for sprinkling (optional)
Instructions
- Prepare the dough: Mix flour, baking powder, and salt in a bowl. Add olive oil and lukewarm water, then knead everything into a smooth dough – about 5 minutes by hand.
- Let it rest: Cover the dough and let it rest for 20 minutes at room temperature.
- Incorporate sesame: Divide the dough into 4 portions. Roll each portion thinly (approx. 3–4 mm), sprinkle with sesame seeds, and gently press them into the dough.
- Roast (optional): For a more intense aroma, roast the sesame seeds beforehand in a dry pan over medium heat for 2–3 minutes until golden brown, then let them cool.
- Cook: Heat a non-stick pan over medium heat without oil. Cook each flatbread for 3–4 minutes per side until golden brown spots appear.
- Done: Serve warm – sprinkle with Fleur de Sel if desired.

- Whole wheat version: Replace half of the flour with whole wheat flour for an earthier flavor.
- Sesame + herbs: Press rosemary or za'atar directly into the dough along with the sesame – perfect for dipping.
