Chia Pudding Recipe
Chia pudding is the uncomplicated "all-in-one" snack for breakfast, dessert, or meal prep: You mix chia seeds with (plant-based) milk, let them swell – done. The natural gel formation turns a few ingredients into a creamy consistency and a pleasantly filling snack that you can adapt to your taste at any time: chocolatey with cocoa, classic with vanilla, or fresh and fruity with berries.
For the basic recipe, mix 4 tbsp chia seeds with 250 ml almond or oat milk and 1-2 tbsp honey/maple syrup in a glass. Important: stir thoroughly to prevent lumps. Afterwards, you can stir in vanilla extract or cocoa powder, depending on your taste. Let the mixture soak in the refrigerator for at least 4 hours, preferably overnight, and top it with fresh berries or fruit before serving.
Variations that always work
- Chocolate Chia Pudding: 1-2 tsp cocoa + optional pinch of cinnamon.
- Vanilla Chia Pudding: Vanilla extract + a spoon of yogurt (or skyr/soy yogurt) for extra creaminess.
- Berry Chia Pudding: Mash berries or use as a topping – especially good with crunch (nuts, granola).
Good to know:
Chia seeds are particularly popular for their fiber and omega-3 fatty acids (ALA). As a guide: According to nutritional data, dried chia seeds contain around 34.4 g of fiber per 100 g.
The proportion of alpha-linolenic acid (ALA) is also high; studies report values roughly in the range of approx. 14.9 to 18.35 g ALA per 100 g (depending on origin/batch).
And: The "pudding magic" comes from mucilage – when soaked, chia seeds can bind about 10-12 times their weight in liquid (depending on conditions), creating the gel-like texture.
Practical tip: It's best to always let chia seeds soak sufficiently and consume them with enough liquid – too dry can be unpleasant.
